Ingredients
- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach (or 1 cup frozen, thawed and drained)
- 1/2 cup crumbled feta cheese
- 1/4 cup cream cheese (optional, for extra creaminess)
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Toothpicks or kitchen twine
Instructions
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a pan over medium heat. Add minced garlic and spinach, cooking until wilted (or heated if using frozen).
- Remove from heat and mix in feta cheese and cream cheese. Season with salt and pepper.
- Cut a pocket in the chicken breasts and stuff with the spinach and feta mixture. Secure with toothpicks or twine.
