- 2 chicken breasts, diced
- 1 cup Arborio rice
- 1 cup white wine
- 3 cups chicken stock
- 1/2 cup Parmesan cheese, grated
- 1 onion, chopped
- 2 cloves garlic, minced
- 8 oz mushrooms, sliced
- 2 tbsp butter
- 1 tbsp olive oil
- Salt and pepper to taste
Instructions
